My Memaw’s Broccoli and Pea Casserole- This is my favorite casserole of all times. My grandmother cooked this when I was little. I loved it so much that I would get up and eat it for breakfast. This is my Thanksgiving go to. Hope you enjoy!!!
-1 16oz bag of cut broccoli
-1 can drained peas
-1 medium chopped onion
-1 cup of cheddar cheese
-1 cup of mayonnaise
-1 can cream of mushroom
-1 teaspoon pepper
-2 eggs
-1 sleeve Ritz crackers
Preheat oven to 400 degrees. Cook broccoli, drain and set aside. Mix cream of mushroom, chopped onion, cheese, mayo, pepper, and egg. Stir in peas and broccoli. Crumble Ritz and spread on top. (I wait until the last 10 min to put on my topping) Cook for 35-40 min until bubbly in the middle.
